Could work quite well. A few points to consider:
- Quarterstaff has already been mentioned as another weapon to specialize in; may be more worthwhile than long sword. You'll have plenty of options though.
- 2-weapon style only goes up to 3 points. You'll reach a total of 7 proficiency points (2 each in 2 weapons, 3 in 2-weapon style) at 9th level, which is also exactly when the big fighter D10 hit dice and hit point con bonus dry up. Dualing at that level also means you'll still be able to hit the max allowed mage level under the SOA XP cap. So 9th level would be your perfect level to dual-class for those purposes.
- You get the option to put points in Quarterstaff and Dagger as a mage also before you regain your Wizard Slayer class.
- You won't be able to wear armor and cast spells at the same time. Some touch spells you may be able to cast before combat and then put armor on; read spell descriptions carefully (or just experiment) to be sure. Even though your AC advantage may not be quite as good as you think, there are plenty of Mage spells to help lower your AC and/or make you nearly impossible to hit.
If you want to be specialized in both Quarterstaff and Dagger by level 9/12, then you'll have to pick one to be specialized in before you dual-class to Fighter, for example:
On creation (7th level Wizard slayer): ** Long Sword, ** Dagger, ** 2-weapon style
9th level Wizard slayer: *** two-weapon style
Dual-class to 1st level Mage: * in Quarterstaff, * in Sling
6th level Mage: * in Club [or whatever Mage weapon proficiency is left other than Dagger; if you do select Dagger you "waste" it]
10th level Mage: Regain Fighter proficiencies
12th level Mage: Second * in Quarterstaff
[Next Mage weapon proficiency is at 18th level, which you need TOB for.]
Final (9th level Wizard Slayer / 12th level Mage): ** Long Sword, ** Dagger, ** Quarterstaff, * Club, *** 2-Weapon Style
