If you don't stop the ogres at the bridge from destroying it, does this have a negative outcome down the road?? I stopped them the first time, but it didn't seem to lead to a different outcome from when I didn't stop them on the next attempt...just curious.

No - in my experience the outcome is the same. The only difference is the experience you get - if the ogres destroy the bridge you get less xp afterwards.
