Feat like dodge and deflect arrow are great but they requer one hand to be free. But why do you want to wast a feat on that if you are going to use a shield, so it is point-less.
How do a bow and crossbow fit in? and will you be able to use those feat if you use a bow? Bow is a two-handed wapeon but is carryed in one hand.

Those two feats were always beyond me.
Altho I thnk you can use the feats with the other hand busy, but you apply the penalty or something. Not sure, I was never interested in those two. And while speaking of feats, why would you take up Bullheaded if it gives half a bonus to will saves as Iron Will, but gives +2 against intimidate checks, but not if you're the one intimidating?! Noone in this game will ever try to intimidate you.

Dodge says that, but if you look in the "AC Breakdown" screen, you'll see that it just applies a +1 Generic bonus to your AC -- even if you're using a 2-handed weapon or a shield.

It's a good Feat.

Yes, I dont know how it was supposed to be implemented... but what it does is give you +1AC stackable with everything... quite good IMO.

These feats may require a free hand in pnp, but as far as I can tell, not in IWD2.
