1) can you still have interactions (i.e. romances, spontaneous conversations) with npc's and such, and,

2) if i create, say, a mage and a fighter, can i receive both strongholds...also, can dual or multiclass characters (swashbuckler/mage) receive both strongholds?

1) Yes, so long as they are in your party.

2) Technically yes, provided you change protagonist to appropriate class. Though there are ppl saying that you can have two stronghold with a dual (or multi) class fighter, as long as you do not accept the keep initially. But I have not verify that yet (ie. my fingers are crossing).
