How exactly does this work? I know you type in: CLUAConsole:CreateItem("Insert Item number here"). Is there a list somewhere that tells you which items you can create and what number you type in?

Yep, if you go to the Ironworks main website (the link is at the top left hand side of the screen) and go to the Cheats section there's a list you can download of every single item in the game.
