I think I made a mistake with my Chars how can I delete them and create another Party or at least some of them?

I restarted the game 3 times befor I was happy with my party. You restart by clicking on the "Options" (computer logo) menu and then clicking on "Restart". I finally ended up with:

Warrior --> Barbarian --> Ninja (in training)
Warrior --> Barbarian --> Samurai
Warrior --> Barbarian --> Paladin
Wizard --> Warlock --> Monk (in training)
Wizard --> Warlock --> Paladin
Wizard --> Warlock --> ??? (undecided yet)

I don't think you need a Priest as anyone can use Healing spells. I also don't think you need a Rogue as you can smask chests in the beginning and once a Barbarian you can learn lockpicking skills. I admit that I did do the $$$ cheat at the Inn to raise my cash up to a decent amount. Good Luck!

You can also delete a character by adding them to the party in the Inn, then Right-click for character review, and one of the buttons on the left is a delete option.
(Well its sommat like that anyway!).

I too am surprised at the limited number of characters the Inn can hold - far less than the original Wizardry (and we have a LOT more memory and disk space nowadays!)
