Jaheira's romance is the largest and filled with subquests. However it is extremely bugged and if you don't have a lot of fixes (Baldurdash) installed you actually can't complete it without using CLUA or Shaowkeeper.
Viconia's romance is nice, easy and bug-free, but not near as extensive as Jaheira's

Plus don't forget, with Vicky, you have to look 'strong' in her eyes, and strong in Drow Eyes is always somewhat evil...
