My experience is that the summoned demons attack everybody in sight BUT the ones who cast PfE last. So if a mage summons a demon and you move out of sightthe demon will attack him protected from evil or not.
This may also be because the mage's AI gets him to attack the "hostile" demon once other hostiles (i.e. YOU) are out of sight.
