Well, it is only the film, but I certainly seem to remember the Witch King react in a 'hurt' manner when stabbed with the dagger.
I would agree with Six - only a female can take them past 1HP - perhaps like a troll. A good place to start looking might be the Valen mod because she enters a similar gaseous form and regenerates slowly, whilst remaining vulnerable to certain types of damage.
