Up your characters' Dex scores. When they level up, add points to Dex. Strength in this game does not determine hit or damage; Dex does. Strength apparently only effects CC.
Either that or create new characters, putting more bonus points on Dex.
Also: look for items that raise hit stats. You can purchase +1 Longswords and shortswords in the Warrior's Guild "Special Items" screen.
