Sounds like a good party, Arfie, although a little light on magic for my taste.
My next six-character party will probably be two warriors (whiska and ratling), two priests (gnome and oomphaz), and two wizards (pixie and elf).
Ratling warrior to become a barbarian and get the locks and picks skill, becoming the primary lockpicker (to use that golddigger trait). Whiska 'cause I like kitties... sometimes....
Two priests so they can get to level 7 in vine and spirit quickly, and ditto for the wizards (sun and stone). And I like the elephants -- the only real issue is finding armor, and by the end of the game, it doesn't really matter what they're wearing
I will mention to you that your stated goal (of two of each elite class) will mean resetting adventures when you are just about completed with the game. And I mean just about completed -- you will be in your very last dungeon.
As for the overall class path, I tend not to get bogged down in it. 'Most everyone gets to be 'most every class anyway, and I tend to change classes around level 12 or 13, with the exception of those initial warriors. They're going for barbarian as soon as they get the gold.
I've played full parties, and I've played solo. The best thing about this game is that there are no right or wrong answers -- only choices. Each game plays differently based on the characters that you have.
