Depends on what you like. If you just run around the wilderness you can probably beat most things that you encounter, especially if you take the easy way to strength and powergame rather than roleplay.
However, there are mods to increase the difficulty, give the game more depth, add more quests, new monsters, new items, new everything.
In addition to that, a lot of the editing is easy so you can actually do that yourself.
They've done well with the locations, I must say, even though some towns are actually pretty small they've made them so they FEEL big. There are tons of dungeons and crypts hidden everywhere. Even hidden shipwrecks that you can go diving for with waterbreathing spells! A sunken city, too, as far as I hear, but I've yet to find it myself.
The dungeons are VERY well made, I've honestly found myself scared sometimes because they were so good. Crypts have spooky fog hanging around graves, and sometimes, in the background, far away, you can hear mystic chanting.....
You can also do almost anything you want in the game, though a few will prevent you from progressing further in the main plot.
You can become a vampire, you can become an assasin, a thief, a hitman, a mage, leader of guilds. A nobleman, a clever trader, close to anything.
You can grow strong and wipe out all life in the world. Or you can just go on with the main quest if you want. You can gain what you want by stealing, or trading. The game is just so f***ing huge....
To me it would probably be boring if I just did the main quest and got my skills strong through all of the "cheesey" and fast ways. If I just do things naturally, however, it'll keep a good challenge level. And if I crave more I can install a damn difficulty mod.
It's so good that I had NWN and Warcraft 3 lying around for weeks without getting played. I STILL haven't even installed NWN!
