Aelia, I think what SW really suffers from is the "idealism of their youth" that people exercise over their memory databanks.
The first SW has like 100 glitches, from visible boom mikes, to stormtroopers running into walls to Luke's famous cry "Carrie!" when he gets back from whomping but on Yavin. And that trench in the Death Star -- was it on a revolving loop or what? It was almost like the scene in MP's Holy Grail where they are running to storm the castle, and still running... and still running... and then *bam* they're there.
Your are so right about the plot of the new movies -- very complex. Very fleshed out.
And, at least in the new movies, the lightsaber duels rock. You can make fun of Yoda the frog-fighter all you want, but Alec Guiness's death scene was a snoozer as far as fight scenes go -- though interesting from the dramatic side of things. And screw the whole "Yoda went from being an old man to being a nutso fighter, inconsistent with the first trilogy" crowd -- if the little dude can lift an X-wing with his mind, he can certainly use his mind to twirl his 3' frame through the air.
But, generally, many adults thought those original movies were a quirky weird and goofy thing at the time -- much as we may see SpongeBob or PokeMon today. Now that the kids who loved those movies as a kid have grown up, they view the new movies with a harsh critic's attitude, and not only idealize the early ones, but also take offense to trying to continue a story they saw as perfect the way it was.
And, if you really hate Jar Jar -- and I admit it, I do too -- go back and watch the little piggy guys in Cloud City play keep-away with C3PO's head from Chewie, or go watch the crazily-reworked singing scene in Jabba's Palace, or just watch the Battle of Endor portion of RotJ and *make* yourself not fast forward it. Better yet, watch the whole "Goldenrod is a God" bit with C3PO on Endor -- complete with Mark Hamil doing the whole "I look like I'm taking a dump, so I must be using the force" bit while hanging upside down from a spit.
