In my opinion dragons are quite easy if you use the following strategy:

1. Cast magic resistance with your lowest cleric. This will give the dragon magic resistance of about 15 - 20% and isn´t considere hostile so he won´t turn red.
2. Simultaneously cast your best mind influencing spells at him like feeblemind (ST -2), chaos (ST -4) etc. - in my experience 1 out of 3 gets through.
3. Hack him into pieces.
4. Loot ...

Using this strat you just need about 4 spells to kill a dragon - it´s up to you if you consider this cheesy ...
