A agree, I usually attack with a sling or darts in between casting spells.
There are a couple of items that reduce casting speed though...

Amulet of Power - which decreases casting time by 1, not available until ch3
Robe of Vecna - decreases casting time by 4 (very useful indeed!), from one of the merchants on the bonus CD, which if you haven't already got can be dl here...

It's about half way down the page & is only a 1k zip file, so will dl quickly even on the slowest connection.
