Well, I don't know why do-gooders aren't role players (I am a do-gooder) but there are some hints what to do:
1. The class. Ignore predefined classes and create your own. Only this way you can get a character, which will fit your play style. Select a race and a birthsign, which gives you a long lasting advantage with respect to your play style. I would select a breton in Mage specialized in combat. Good amount of mana and no disadvantages. The holes in the stats and skills can be removed during the game.
2. The main quest begins in Balmora at Gaius Cosades. Don't haste. Level 10 or so is the right moment when you should go to Gaius. In the meantime, become a member of some guilds and do some quests for them.
3. Stealing and Speechcraft need a pretty high skill level if they should be of some use. Say, 50 or so but rather better. Therefore, do not haste with the Thieves Guild or the house of Hlaalu. Train at trainers a bit before you start completing quests for these guilds.
