From what I´ve read from this forum - no. But I don´t know, haven´t even finished my own first journey yet, which I started three months ago. Just clearing the last CK catakomb.

As Six said, it is a little tedious but you definitely can leave the Undercity and trapse back through the maze. I did that from right outside the temple of Bhaal. When I returned after doing the Tales quests there were no respawns in the Thieve's Maze, and I think none in the Undercity either (although I can't swear to the latter).

Lermernis, you are correct and not.
The thieves guild maze doesn't respawn, but the Undercity does (the skeleton warriors dont), but the skeletons,zombies and what-not do (although not to the extent when you first find them.
