Does the psion blade protect against intelligence drain, or just the stun etc?

Just stun. If you have the Item Upgrade mod there is a weapon (Lilarcor +5) that protects from INT drain.

If you want your Fighter(s) to avoid as much INT-Drain as possible, I suggest taking up a few Greater Deathblow HLAs.
