Indiana Jones
LOTR
if they count I'd also vote for the first three Bond movies (Dr. No, From Russia with love, Goldfinger). Afterwards the series never reached the same constant quality again.

Hmmm - as movies or as books???

Movies
1) LOTR
2) Star Wars (the original trilogy)
3) Pick your next from the rest of the ordinary and mundane.

Books
1) LOTR
2) Fionovar Tapestry (Guy Gavriel Kay)
3) Assassin Trilogy (Robbin Hobbs)

I'me surprised no one has mentioned Dragonlance, the chronicles, and the legends series where great, some of the best fantasy i've read. Other then DL, i'd have to say Robin Hobb's "Farseer Trilogy".
