Is it possible to complete all quests in one run?

I thought some of them cancelled each other out.

If you mean in a single session without turning off the computer, no sleep and only allow yourself toilet breaks and mealtimes. No.

Oh wait! You mean has anybody tried to complete all the quests in the game.

One word. Impossible.

Some quests cancel each other out, while Stronghold quests depend on your class. I have always endevoured to complete all possible quests however, including the NPC-related ones.

either you choose the thieves or Bohdi.

I have tried completing all NPC-quests in a single game by having five regular members and taking NPC's on for the duration of their quests (waiting to pick up Imoen later)

Yes, Dundee is correct. Most quests can be done, but then there is the stronghold quests, and character quests. And there is subquests in quests. But a very good question. I try to do all that I can without making a fatal mistake like (SPOILER) joining Bodhi. Worst mistake ever.

why do you think joining Bhodi is a mistake, besides the obvious betrayal later? I've never done it and played it all the way through that way is there a loss of items or experience in some way because, I thought about trying it just to see how it turns out.

well for one you can't recruit the shadow theives to help you fight bodhi later, as they'll all be dead

Well, you could always recruit Drizzt and co., or the Paladins of the Radiant Heart, but if you joined with Bodhi you're probably evil so neither faction will probably want to have anything to do with you either.

I think I completed most of the quests, but there are still characters I never let join my party, like Edwin, Korgan and that damn tiefling. Because...damn' there are many quests, most of them are real cool though.
